Classic Protein Pancakes (makes 4 medium pancakes)

Ingredients

  • 60g PEScience Pancake and Waffle Mix (any flavour)
  • 1 large egg
  • 80ml water or unsweetened almond milk
  • Cooking spray or a small amount of butter for the pan

Instructions

  1. In a bowl, combine the PEScience Pancake and Waffle Mix, egg, and water/milk. Stir until just combined. Let the batter rest for 2 minutes — this helps them get fluffy.
  2. Heat a non-stick pan or griddle over medium heat. Spray with cooking spray.
  3. Pour about 3 tablespoons of batter per pancake onto the pan.
  4. Cook until bubbles form on the surface and the edges look set (about 2 minutes). Flip and cook for another 1-2 minutes until golden.
  5. Stack and top with your favourites.
