Classic Protein Pancakes (makes 4 medium pancakes)
Ingredients
- 60g PEScience Pancake and Waffle Mix (any flavour)
- 1 large egg
- 80ml water or unsweetened almond milk
- Cooking spray or a small amount of butter for the pan
Instructions
- In a bowl, combine the PEScience Pancake and Waffle Mix, egg, and water/milk. Stir until just combined. Let the batter rest for 2 minutes — this helps them get fluffy.
- Heat a non-stick pan or griddle over medium heat. Spray with cooking spray.
- Pour about 3 tablespoons of batter per pancake onto the pan.
- Cook until bubbles form on the surface and the edges look set (about 2 minutes). Flip and cook for another 1-2 minutes until golden.
- Stack and top with your favourites.
