Ingredients
- 1/2 cup Nuts 'n More Protein Peanut Butter
- 1 scoop PEScience Select Protein (vanilla or chocolate)
- 1/4 cup PB2 Powdered Peanut Butter (for structure, keeps them from being too wet)
- 1/4 cup Krisda Sugar-Free Semi-Sweet Chocolatey Chips
- 3/4 cup rolled oats
- 2–3 tbsp sugar-free syrup or a little milk
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Mix the base. Stir the nut butter, protein powder, PB2 powder, oats, vanilla and salt in a bowl.
- Adjust. Add sugar-free syrup or milk 1 tbsp at a time until the mix holds together when pressed.
- Add chips. Fold in the sugar-free chocolatey chips.
- Roll. Scoop and roll into 14 balls.
- Chill. Refrigerate 30 minutes to firm up. Store airtight up to 1 week, or freeze up to 2 months.
Tips & variations
- Too dry? Add more syrup or milk. Too wet? Add oats or more PB2.
- Crunch: add chopped nuts or cacao nibs.
- Higher protein: add a second scoop of PEScience Select Protein and extra liquid.
