The baking-powder dry-brine is the single best wing hack we've found. The alkalinity raises the chicken skin's pH, breaks down proteins and lets fat render — that's what produces the deep-fryer crisp without oil. Wings are also one of the most macro-friendly meats for hard-training athletes: 35g protein, generous fat for hormones, zero carbs.

Ingredients (2 servings (12 wings))

  • 12 chicken wings (drumettes + flats, 900g)
  • 1 tbsp baking powder (aluminum-free)
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Optional: 2 tbsp buffalo sauce for tossing

Instructions

  1. Pat wings completely dry with paper towels.
  2. Toss in baking powder, salt, garlic powder, paprika and pepper until evenly coated.
  3. Preheat air fryer to 200°C / 400°F.
  4. Arrange wings in single layer (work in batches). Air fry 20-25 minutes, flipping at 12 minutes.
  5. Pull when internal temp hits 75°C / 165°F and skin is deeply golden.
  6. Toss in buffalo sauce if using, serve immediately.
