- 1 sheet pastry puff package
- 1/3 cup pumpkin puree not pumpkin pie filling
- 2 tbsp. pumpkin spice peanut butter
- 3 tbsp. granulated sweetener
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp salt

Preheat oven to 400F and prepare a baking sheet with parchment paper.

Cut the pastry puff sheet into 4 squares and set aside

In a small pot, stir together the pumpkin puree, erythritol, spices and salt over low heat for 2 minutes. Remove and distribute pumpkin filling between each pastry puff. Fold pastry puff over to create a triangle. Press the edges together with a fork and bake for 17-20 minutes.
