- 1 1/4 cup high protein cookie butter peanut butter
- 1/4 cup erythritol or zero calorie sweetener
- 1/2 cup coconut sugar
- 1 large whole egg
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/2 cup chocolate chips milk or dark chocolate
- 1 tsp coconut oil

Preheat oven to 350F and prepare a baking sheet with parchment paper or a silicone mat.

In a large bowl, stir together the cookie butter, vanilla and egg until smooth. Add in erythritol, coconut sugar, baking soda and baking powder. Stir using a fork or place all ingredients into a food processor or mixer and mix until a dough forms.

Use a cookie scooper to drop cookies on the prepared baking sheet and then use your hands to press them flat. Bake for 9-11 minutes. Let cool before transferring to a cooling rack. Once cooled, take one cookie and crumble into small pieces and set aside.

Melt chocolate and coconut oil together until smooth. Spoon chocolate over half of each cookie and sprinkle with cookie pieces. Place the cookies into the fridge until chocolate is solid. Serve.
