- 1 1/2 cups gluten free flour
- 2 tbsp granulated sweetner
- 1/8 tsp salt
- 6 tbsp light butter
- 5 tbsp cold water
- 1/3 cup toffee crunch peanut butter
- 1/4 cup powdered sugar
- 1 tbsp toffee crunch peanut butter
- 1/2 tbsp milk
- almond milk for brushing

Place the butter, sweetener, and salt into a mixer and beat until well mixed. Add the water and mix until incorporated. Add in flour and continue mixing until a dough forms. Wrap dough in plastic and place in the refrigerator for 30 minutes or until ready to make.

Preheat oven to 350F and prepare a baking sheet with parchment paper. Roll dough out on a dusted surface until it’s about ⅛ inch thick. Use a pizza cutter to cut rectangles 3” long and 2” wide. Repeat until you have used all the dough. You should have about 14 rectangles.

Place the rectangles onto the prepared baking sheet. Drop a dollop of peanut butter into the center of 7 of the rectangles. Cover with remaining rectangles and use a fork to pinch the edges shut. Brush with almond milk.

Bake for 12-14 minutes or until golden brown.
