- 2.5 tsp active dry yeast
- 1/4 cup warm water
- 1 1/2 cups almond milk
- 2 large eggs room temp
- 1/2 cup butter room tempertaure
- 5 cups gluten free flour plus additional for dusting
- 1/3 cup granulated sweetener
- 1/4 cup butter room temperature
- 1/4 cup brown sugar
- 2 tbsp cinnamon
- 1/4 cup powdered sugar
- 1/4 cup maple peanut butter powder
- 2-3 tbsp. almond milk

Place the warm water in a small bowl and sprinkle with yeast, stir and set aside for yeast to get foamy (about 7-8 minutes).

Place the eggs, milk and butter into a mixer and beat until well mixed. Add in the foamy yeast and mix until combined. Add in the flour 1 cup at a time until a dough forms. Cover and place in a warm spot for 1 hour for dough to rise.

After an hour, on a clean surface sprinkled with gf flour, roll dough out until it’s about 20” wide and 18” long. Whisk together the filling ingredients and spread it over dough leaving about a 1/2“ inch from the edges.

Gently roll up the dough longways and then pinch the edges together. Cut 1” pieces and place them into a baking sheet prepared with non-stick spray. Cover and let sit in a warm place for 1 hour.

After one hour, preheat oven to 350F and bake cinnamon rolls 28-32 minutes or until golden brown. Let cool for five minutes.

Whisk together the glaze ingredients and spread over rolls.
