- 7 tbsp cookie butter peanut butter 1/3 cup + 2tbs
- 3 tbsp black strap molasses
- 1 cup oat flour
- 1 large egg
- 6 tbsp coconut sugar 1/4 cup + 2 tbsp
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder

Preheat oven to 350F and prepare a cookie sheet with parchment paper.

In a mixing bowl, combine all dry ingredients. Add in the remaining ingredients and mix until a dough forms or place into a mixer and mix using a paddle attachment until a dough forms.

Roll dough out about ⅛ inch thick. Use a cookie cutter to cut out gingerbread men shapes.

Gently transfer the gingerbread men to the cookie sheet. Repeat with excess dough until all dough is used up. Bake cookies for 11-12 minutes. Let cool before serving.
