High-Protein BBQ Chicken Spaghetti

Ingredients (serves 2)

  • 120g Fiber Gourmet High Fiber Spaghetti
  • 250g cooked chicken breast, shredded or diced
  • 1/3 cup (80ml) G Hughes Sugar Free BBQ Sauce (Original, Mesquite, or Carolina Style Sweet Heat)
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper (any colour)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt, pepper, and smoked paprika to taste
  • Optional: shredded mozzarella, fresh cilantro, green onion for garnish

Instructions

  1. Cook the Fiber Gourmet Spaghetti according to package directions. Drain and set aside, reserving 1/4 cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add the shredded chicken and G Hughes BBQ Sauce. Stir to coat everything evenly. Cook for 2-3 minutes until heated through.
  5. Add the cooked spaghetti to the skillet. Toss to combine, adding a splash of reserved pasta water if needed to loosen the sauce.
  6. Season with smoked paprika, salt, and pepper to taste.
  7. Serve topped with shredded mozzarella, cilantro, or green onion if desired.

Carolina Sweet Heat BBQ

Mesquite Smokehouse

Use G Hughes Mesquite BBQ sauce. Add 1/2 tsp liquid smoke and a pinch of cumin. Garnish with crispy bacon bits.

BBQ Chicken Pizza Pasta Bake

After combining everything in the skillet, transfer to a baking dish. Top with shredded mozzarella and bake at 400°F for 10 minutes until bubbly and golden. Pizza meets pasta.
