Protein Banana Bread That Tastes Like the Real Thing

This is not a sad, dry protein loaf. This banana bread is moist, sweet, and genuinely delicious — you would never guess it has 15g of protein per slice. The trick is using ripe bananas for natural sweetness and moisture, PEScience Select Protein for flavour and protein, and PEScience Pancake and Waffle Mix as the flour base.

Ingredients (makes 8 slices)

  • 2 large ripe bananas, mashed (the riper the better — brown spots are good)
  • 60g PEScience Pancake and Waffle Mix (Buttermilk or Cinnamon Roll)
  • 1 scoop (30g) PEScience Select Protein (Gourmet Vanilla, Cake Pop, or Snickerdoodle)
  • 2 large eggs
  • 60g plain non-fat Greek yogurt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional add-ins: 2 tbsp sugar-free chocolate chips, 2 tbsp chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan or line with parchment paper.
  2. In a large bowl, mash the bananas with a fork until mostly smooth (a few small chunks are fine).
  3. Add the eggs, Greek yogurt, and vanilla extract. Whisk until combined.
  4. In a separate bowl, mix the PEScience Waffle Mix, protein powder, baking powder, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  6. Fold in chocolate chips or walnuts if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 35-40 minutes until the top is golden brown and a toothpick inserted in the centre comes out clean (a few moist crumbs are okay — they will set as it cools).
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack. Resist cutting it immediately — it needs to set.

Flavour Variations

Chocolate Chip Banana Bread

Cinnamon Roll Banana Bread

Use PEScience Snickerdoodle protein + Cinnamon Roll waffle mix. After baking, drizzle with a glaze made from 2 tbsp cream cheese + 1 tbsp almond milk + sweetener. Incredible.

Double Chocolate Banana Bread

Use PEScience Frosted Chocolate Cupcake protein + Dark Chocolate waffle mix. Add 1 tbsp cocoa powder and sugar-free chocolate chips. Drizzle with Mrs Taste Cookies and Cream Syrup.

Peanut Butter Banana Bread

Use PEScience Peanut Butter Cookie protein + Buttermilk waffle mix. Swirl 2 tbsp natural peanut butter into the top of the batter before baking.

Pro Tips

  • Ripe bananas are everything. Green bananas will not work — you need the natural sugar and moisture from overripe bananas. Freeze ripe bananas and thaw them for even sweeter, more concentrated flavour.
  • Let it cool fully before slicing. It will seem undercooked when warm but firms up perfectly as it cools.
  • Toast leftover slices. Day-old protein banana bread, toasted with a smear of nut butter, is an elite snack.
  • Freezer friendly. Slice the loaf, wrap slices individually, and freeze for up to 2 months. Toast straight from frozen.
