Ingredients (5 bowls)

  • 680g ground turkey (93% lean)
  • 1 can (400g) black beans, rinsed
  • 1.5 cups dry brown rice (cooks to ~5 cups)
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 1 cup corn (frozen or canned)
  • 1 cup 0% Greek yogurt (for sauce)
  • 1 lime, juiced
  • 1/4 cup chopped cilantro

Instructions

  1. Cook brown rice per package (35 min) or pressure cook 22 min.
  2. Heat olive oil in skillet, brown turkey 6-7 min, draining excess fat.
  3. Stir in taco seasoning, 1/2 cup salsa, black beans and corn. Simmer 5 min.
  4. Mix Greek yogurt, remaining salsa, lime juice and cilantro to make sauce.
  5. Build bowls: 1 cup rice, 1/5 of the turkey-bean mix, 2 tbsp sauce each.
  6. Cool, seal, refrigerate up to 5 days.
