Ingredients (5 bowls)
- 680g ground turkey (93% lean)
- 1 can (400g) black beans, rinsed
- 1.5 cups dry brown rice (cooks to ~5 cups)
- 1 tbsp olive oil
- 2 tbsp taco seasoning
- 1 cup salsa
- 1 cup corn (frozen or canned)
- 1 cup 0% Greek yogurt (for sauce)
- 1 lime, juiced
- 1/4 cup chopped cilantro
Instructions
- Cook brown rice per package (35 min) or pressure cook 22 min.
- Heat olive oil in skillet, brown turkey 6-7 min, draining excess fat.
- Stir in taco seasoning, 1/2 cup salsa, black beans and corn. Simmer 5 min.
- Mix Greek yogurt, remaining salsa, lime juice and cilantro to make sauce.
- Build bowls: 1 cup rice, 1/5 of the turkey-bean mix, 2 tbsp sauce each.
- Cool, seal, refrigerate up to 5 days.
