Ingredients
- 2 medium bananas, overly ripe
- 3 eggs, room temperature
- 1/2 cup almond milk or milk of choice, room temperature
- 1/4 cup melted butter or vegetable oil
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1/2 cup + tbsp PEScience French Toast Protein4Oats
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tso salt
Streusel
- 1/4 cup butter, room temperature
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
Directions
- Preheat the oven to 350 F and prepare a loaf pan with non-stick spray and parchment paper.
- In a bowl, mash the bananas and then whisk in the eggs, milk, oil, brown sugar and vanilla extract until well combined.
- In another bowl, combine the flour, protein, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet and use rubber spatula to mix until well blended and no spots remain.
- Add all the streusel ingredients in a bowl and use a pastry cutter or fork to combine.
- Pour batter into the prepared pan and top with streusel.
- Bake banana bread for 45-55 minutes and a toothpick comes out clean. Let cool completely before cutting into 12 pieces and serving.
