French Toast Banana Bread with Streusel

Ingredients

  • 2 medium bananas, overly ripe
  • 3 eggs, room temperature
  • 1/2 cup almond milk or milk of choice, room temperature
  • 1/4 cup melted butter or vegetable oil
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/2 cup + tbsp PEScience French Toast Protein4Oats
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tso salt

Streusel

  • 1/4 cup butter, room temperature
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon

Directions

  • Preheat the oven to 350 F and prepare a loaf pan with non-stick spray and parchment paper.
  • In a bowl, mash the bananas and then whisk in the eggs, milk, oil, brown sugar and vanilla extract until well combined.
  • In another bowl, combine the flour, protein, baking powder, baking soda, and salt. 
  • Add the dry ingredients to the wet and use rubber spatula to mix until well blended and no spots remain.
  • Add all the streusel ingredients in a bowl and use a pastry cutter or fork to combine.
  • Pour batter into the prepared pan and top with streusel. 
  • Bake banana bread for 45-55 minutes and a toothpick comes out clean. Let cool completely before cutting into 12 pieces and serving.
